Modern Method
Use a teapot or mug with infuser.
Water Temperature: 90°C (194°F).
Brewing Time: 3-5 minutes.
Steps:
- Place 1-2 teaspoons of tea leaves in an infuser.
- Steep and enjoy.
Traditional Method (Gongfu Cha)
Preferably to brew in Yixing clay teapot or porcelain gaiwan
Water Temperature: 85-95°C (185-203°F).
Brewing Time: 20-30 seconds for the first infusion.
Steps:
- Rinse and warm the teapot/gaiwan and cups.
- Add 1-2 teaspoons of tea leaves.
- Rinse the leaves briefly with hot water.
- Brew and pour into cups.
Iced Tea
When preparing loose leaf iced tea, measure 3 teaspoons of tea for each 8-ounce glass.

Cooper C. First notes are very bright and fresh, with a ginseng flavor reminiscent of wheatgrass. The tea brews to a pale amber color and the flavor is relatively mild. As the spheres begin to open up, more intense flavors get revealed, including an intriguing licorice aftertaste.
