Traditional Method
Teapot/Gaiwan: Aged tea requires a yixing teapot.
Water Temperature: 95-100°C (203-212°F).
Brewing Time: 10-30 seconds.
Steps:
- Rinse and warm the teapot/gaiwan and cups.
- Add 1 tea leaf.
- Rinse the leaf with a quick infusion.
Brew and serve.
Modern Method
Vessel: teapot or mug with infuser
Water Temperature: 95-100°C (203-212°F).
For the first infusion, pour water over the leaf and let it sit for 2-3 seconds before discarding to rinse the tea and allow it to absorb some water. Then, pour water again and wait 20 seconds before enjoying your tea. With each additional steeping, gently increase the brewing time by 5-7 seconds. This tea preserves its rich aroma and flavor for 8 or more infusions, making it perfect for multiple brews.
