One small square piece is perfect for about 500ml (17 fl oz) of water, lasting 4-5 tea sessions. Use hotter water for the first infusion to fully awaken the tea. Start with a 40-50 second steep, gradually increasing up to 10 minutes for the 4th-5th infusion.
Traditional Method (Gongfu Cha).
Teapot/Gaiwan: Preferably yixing clay teapot or porcelain gaiwan. Water Temperature: 85-95°C (185-203°F).
Brewing Time: 50-60 seconds for the first infusion. Steps: - Rinse and warm the teapot/gaiwan and cups. - Break off a small piece of tea from the brick. - Rinse the leaves briefly with hot water. - Brew and pour into cups.
Modern Method Teapot or Mug with Infuser: Use a teapot or mug. Water Temperature: 90°C (194°F). Brewing Time: 3-5 minutes. Steps: - Break off a piece of tea from the brick and place of tea leaves in an infuser. - Steep and enjoy.
