Brewing
Traditional Method
Teapot/Gaiwan: Aged tea requires a yixing teapot.
Water Temperature: 95-100°C (203-212°F).
Brewing Time: 10-30 seconds.
Steps:
- Rinse and warm the teapot/gaiwan and cups.
- Break off a small piece of tea from the cake (if using a cake). Utilizing tea pick will simplify the process.
- Rinse the tea leaves with a quick infusion.
- Brew and serve.

Modern Method

Water Temperature: 100°C (212°F).
Brewing Time: 4-5 minutes.

For curious minds
Xishuangbanna, or "Banna" for short, is one of Yunnan Province's eight autonomous prefectures and a beloved spot for Chinese elephants. They often travel from Myanmar through China to find a new home in Laos or Vietnam. While they generally do not disturb tea trees, they can cause havoc along the way. In 2021, a herd of 17 elephants ventured north from their reserve in Xishuangbanna, leaving a trail of mischief in their wake. As a result, they visited the city of Kunming, trampled a lot of fields, and returned back. The successful return of these majestic creatures was made possible by a team of 360 individuals and 140 drones. As they captured the hearts of Chinese social media and television, these elephants became instant celebrities. To commemorate their voyage, the tea factory released a collection of Puerh tea, Shen and Shu, using raw materials from the Feng Zhai village in the Mengla region of Yiwu. The resulting tea is as strong and impressive as the elephants themselves!
